Background
Boulder County Land Use Code Docket DC-20-0002 Accessory Meat or Poultry Processing came to fruition after engaging with the agricultural community across the county and identifying the need to allows farmers to process animal products in a small-scale fashion. Through an accessory use classification, agricultural operations can have the capacity to slaughter, dress, and process animals grown on-site, which currently require processing in larger meat processing or slaughtering facilities, often outside of Boulder County. The land use text amendment would provide farmers an additional venue for participating in the local economy, bolstering the local food system, and overall contributing to more sustainable agricultural practices.
On August 11, 2020, the Board of County Commissioners authorized staff to pursue text amendments to the Boulder County Land Use Code regarding accessory meat and poultry processing uses.
